This vanilla cupcake and cake mix from Tasty Me is a convenient base for cupcakes, muffins and cakes. The 400 g pack is gluten-free and lactose-free, and contains no palm oil or hydrogenated fats, making it a good choice for health-conscious bakers following a special diet.

Preparation is simple: mix the contents of the bag with 150 g of room-temperature butter and 200 g of eggs (4 medium eggs), then beat for 3 minutes on medium speed. For a lactose-free version, replace the butter with 150 g of vegetable oil. Bake at 170 °C, or 160 °C in a fan oven.

The mix can be used for regular cupcakes (30 to 35 minutes), mini cupcakes (12 to 15 minutes, about 32 to 36 pieces) or a 20 cm round cake (50 to 60 minutes at 150 to 160 °C). May contain traces of milk, egg, soy and nuts.
