SMART ORGANIC organic amaranth is a gluten-free pseudo-grain sold in a 500 g pack. The seeds contain all nine essential amino acids and almost twice as much protein as rice or maize. They also provide fibre, iron, selenium, magnesium, phosphorus and vitamin B6. The product is made from 100% organic amaranth, making it a good choice for a balanced diet, including for people with coeliac disease.
Preparation is simple: bring 3 cups of water to the boil, add 1 cup of dry amaranth seeds, then simmer on low heat with a lid on for about 20 minutes, until the water is absorbed. Cooked amaranth is usually sticky and slightly lumpy in texture.
It works well in breakfast porridge, salads, savoury dishes or desserts.
