Mrs. Emma, who was actually a man, but despite this, this cookbook, which was published as a result of a call for tenders, is attributed to her. Mrs. Emma defined exactly what she expected from the submitted recipes: "I am not thinking of recipes written out of a cookbook, but, on the contrary, of a recipe for a rare and unknown dish or a rare and unknown version of an unknown dish that is unknown in the literature but tried in practice , the sender of which would preferably establish the place and time of its origin, as far back as he can trace it." The collection of submitted and selected recipes was published in 1902 and became a real success book, and its recipes provide an excellent culinary treat. In reality, Mrs. Emma was Hugó Ignotus (1869-1949), one of the well-known and successful publicists of her time.
