This gluten-free linzer cookie is filled with apricot jam and coated with a cocoa glaze. Instead of conventional flour, the dough is made from coconut flour and almond flour, combined with tapioca starch and rice protein powder. It is a suitable choice for anyone who avoids products made with regular flour because of gluten sensitivity.
The filling is apricot jam with a 25% fruit content, and the coating contains 15% cocoa-based coating mass. Other ingredients include butter, bamboo fibres and egg white. According to the manufacturer, the product is made from natural ingredients and is gluten-free.
