Casarecce is a traditional Sicilian pasta. It comes from the word "Casereccio" which means "made at home". The dough was traditionally made from smaller rectangles and is still made today by double-rolling them. The high-quality casarecce pasta is characterized by its slightly rough surface, which, in addition to its shape, further helps the sauces stick. It is typically used for eggplant, tomato, cheese and basil dishes, but it is also excellent for pesto.
