This gluten-free sponge cake flour from IR lets you bake a classic sponge cake using only gluten-free ingredients. It suits a gluten-free diet and can be included in a dietary meal plan. The blend contains gluten-free oat flour, tapioca starch, potato starch and rice flour, along with emulsifiers, stabilisers such as xanthan and guar gum, and fibres from chicory and oligofructose.

The recommended recipe uses 65 g of the flour, mixed with 3 eggs, 15 to 20 ml of water and 50 g of a sugar substitute or 70 g of apple sugar. Whisk the batter until frothy, pour it into a tin and bake at 160 to 170 °C until golden brown. The pack contains 500 g of flour.
