Sponge cake:
Ingredients (for 600 gram sponge cake):
• 210 g Szafi Reform Paleo cake flour
• 6 pcs. M egg
• 35 g Szafi Reform coconut oil (liquid!)
• 80 g of water
Preparation: Add coconut oil and water to the cake flour. Let's choose 6 separately. M egg yolk and white. Add the yolk to the flour, and beat the white to a stiff foam. Add 3/4 of the foam to the flour and process with a food processor together with the oil, egg yolk and water. Then carefully mix in the remaining egg white. Finally, pour the mixture into an 18 cm mold and smooth the top with a wet spoon. Bake in a preheated oven at 180 degrees for 40 minutes. After baking, leave to cool on a wire rack, then fill with your favorite cake cream.
