What are salvestrols?

Salvestrols are therefore compounds of plant origin (phytonutrients, i.e. plant active ingredients) which are fundamentally important for our health, but since our body is not capable of producing them, we must take them in with our food. The substances classified in this group, although different from a chemical point of view, nevertheless act in a similar way: they exert their beneficial effect by reacting with the given enzyme in the damaged cell. This enzyme (CYP1B1) is only present in malfunctioning cells (e.g. cancer cells), and when it encounters salvestrol, it converts it into a compound that has a toxic effect on the diseased cell. Since this enzyme does not occur in healthy cells, salvestrol does not have any harmful effects on them.

What do salvestrols do?
The body's cells use salvesterols to "repair" themselves when something goes wrong. Salvestrols are therefore the cell's own "policeman", which ensures the proper functioning of the cell. The body would normally use salvestrols in situations where it kicks into high gear for some reason, which usually causes inflammation. There seems to be some connection between the changes in "modern" living conditions over the last 100 years and the gradual decrease in the amount of salvestrols in our diet. Antioxidants try to protect our cells against DNA damage, but once something serious happens, they are ineffective. Salvestrols work "outside" antioxidants: they eliminate damaged cells - and only damaged cells! Salvesterols and diet
It is not easy to find foods high in salvesterol. Different salvestrols are found in different concentrations and at different levels of biological activity, e.g. in strawberries, oranges, grapes or even cocoa. There are more than 550 varieties of oranges, more than 200 varieties of strawberries and grapes, and more than 450 varieties of cocoa beans! They all contain different amounts of salvestrols, which have different biological activities for each variety.
Examination of other likely sources of salvestrols in the Western diet – fruit juices, other beverages and processed foods – also showed that they are largely lacking in salvestrols. In the case of certain juices that were supposed to contain salvestrols (eg cranberry juice), they were found to have been removed from the juice during the processing process to make the final product sweeter – as salvestrols often have a harsh, bitter taste.
According to estimates, today the salvestrol content of our diet 100 years ago is approx. We consume 10–20% of it. And although we are constantly encouraged to eat as much fresh fruit and vegetables as possible, if we do not choose products from organic production, it is unlikely that we will provide our body with sufficient amounts of salvesterol through our diet.
