The sweetening properties of stevia, a medicinal plant native to South America, were discovered hundreds of years ago by the Indians. It is marketed in several forms (dried, ground, powdered, and liquid sweeteners are also made from it), but the most popular is the version mixed with erythritol. A quarter of the amount of traditional sugar is required for the given recipe.
