The product has a medium Bloom index number, which indicates its gelatinization ability. (While with a lower Bloom number you get a more vibrating texture, with a higher value you can achieve a harder, more brittle state.)

Dosage:
For creams, it is recommended to use 6 grams of gelatin, and if you want a cutable texture, add 9 grams of gelatin powder (a tablespoon).

Preparation:
It is important not to boil the gelatin, as it may lose its gelatinizing ability. Dissolve on low heat, then cool to lukewarm. Then add to cold liquid or cream.
It is not recommended to add fresh fruit, because the protein-decomposing enzyme of the fruit can dissolve the gelatin. If you would like to make a fruity delicacy, cook the fruits for a few minutes beforehand. With this preparation, the gelatin will already have a more suitable consistency.
