    Black cardamom pods and seeds are used. Black cardamom is larger than green cardamom, its surface is rougher, and its color is dark brown. After picking, it is dried over a fire, which gives it a smoky aroma in addition to camphor. Unlike green cardamom, black cardamom is not suitable for flavoring sweets. Indian cuisine uses it to prepare meat dishes and sauces, while Vietnamese cuisine uses it to flavor Pho soup, among other things.
