Laurel is one of the oldest known and most widespread herbs. An evergreen shrub or tree leaf (Lauri folium) found in the wild in Asia Minor and the Mediterranean region, but especially in cultivation, provides the spice with a valuable character. The lance-shaped leaves, shiny on top, matte on the bottom, leathery, transparently dotted, with intact edges, typically have a spicy smell and a bitter taste. They contain essential oil, tannic acid and bitter substance.
