Contrary to popular belief, the original macarons can be traced back to Italy. When Catherine of Medici of Italian origin married II. Henrik of France in 1553, he brought his own confectioners with him to France, who did not leave behind their macaron recipes. Back then, the macaron referred to a simple biscuit, which the French rethought and created the sweet we know today, with two biscuits and some cream. The macaron also has its own day, on March 20 the international Macaron Day is celebrated.
